Ikejime Bluefin Tuna Collar Lollipop

Nose to Tail Tuna in all of it's glory. The very bottom of the collar with the most beautifully marbled meat. Roast these whole and let the fat crisp up. You could even coat them like a Tuna Schnitzel with some tarragon mustard and lemon breadcrumbs.
