While Hake and tusk have quite soft flesh, the meat on a ling holds its structure really well - making it ideal for cooking and particularly brilliant for curry. Both very high in protein but low in fat, it also doesn't have an overtly strong flavour, meaning you can add lots to it OR give it to children who may otherwise be less enthusiastic pescatarians.
